* 2 cake mixes any spice

* 1- 9" circular cake pan
* 1 loiter pan

* 2 Dumdums or other curved sweetie for eyes

Prepare 2 cake mixes separately, according to directions on the box. Spray 9 inch spherical pan, mooch pan and cupcake pans with non-staff or baking spray. Pour pummel into globular pan 2/3 broad, cupcake pans 2/3 extensive, and remainder into mooch pan. Bake at 350 according to cake mix present directions for those sized pans. A 2006 study from a joint team of researchers from the University of California-Davis and the University of Dusseldorf in Germany ascertained that the compound epicatechin found in cocoa is directly linked to improved circulation and other hallmarks of cardiovascular function. The researchers explained that the relaxation response observed in the blood vessels of the subjects was mediated by nitric oxide (NO), a key signal released by the inner lining of blood vessels (the endothelium). Because the vessels are able to relax and become less stiff, they are less susceptible to clotting, blockage and risk of high blood pressure. (1)

Cesar G. Fraga of the University of Buenos Aires recently demonstrated a rise of chocolate-derived procyanidins in the blood of men and women who had just eaten cocoa-based foods. His team found that blood sampled two hours after cocoa consumption protected its circulating lipids from oxidation. The more chocolate they ate, the better the protection. (2) Nutritionist Carl L. Keen of the University of California-Davis says that prostacyclins are naturally occurring compounds that inhibit platelet clotting, reduce risk of thrombosis and blood vessel constriction, and prevent the oxidation of LDL (the "bad" cholesterol), as well as its entry into the blood vessel walls, where it can result in inflammation. Keen's study, published in a 2005 issue of the American Journal of Clinical Nutrition, found that the procyanidin and flavonol content of cocoa again demonstrated significant antioxidant properties and the ability to protect the heart and vascular system. (3) If you have high blood pressure, a daily serving of flavonol-rich dark chocolate might lower your blood pressure, researchers report in Hypertension: Journal of the American Heart Association. (4) "Previous studies suggest flavonoid-rich foods - including fruits, vegetables, tea, red wine, and chocolate - might offer cardiovascular benefits, but this is one of the first clinical trials to look specifically at dark chocolate's effect on lowering blood pressure among people with hypertension," said one of the authors of the study. The findings also prompted the researchers to recommend that flavonoid-rich foods should be part of an overall healthy diet, and dark chocolate should be part of that effort.

History of Chocolate - From Bean to Bar

The cocoa tree is botanically called Theobroma Cacao - food form the Gods. The tree is native to the rain forests of the Americas and originally domesticated in Central America. It is a fussy sort of tree which can only grow in the band 20 degrees north and south of the equator. Even though there is still a debate , the Mayans were the first to cultivate the tree starting in 300AD then the Aztecs in 1100AD - seems as though EVERYONE wanted in on the decadent action. I would have to say I cannot blame them! The product that was consumed during these times was called Xocolatl which was a beverage consisting of cornmeal, chilies, cinnamon, anise seed, vanilla and other spices.

It was consumed only by royalty on special occasions, in golden cups which were used only once. The tree which is unique and special, grows in the shade of the rain forrest canopy. Loss of rainforest also means loss of growing areas for cacao. So if you are not already contributing to saving the rainforest for global warming and our wildlife - perhaps lack of decadent chocolate can be a motivator! One of the most unique features of this tree is that the blossoms form on the trunk and lower branches unlike the fruits we are familiar with growing on the upper and newer growth. They are pollinated by very tiny insects called midges often during the nighttime. The tree can have up to 10,000 blossoms, only 10-50 of them mature in the fruit (pod). The tree self regulates how many pods it can sustain without taxing its own internal systems or breaking its branches. When the pod ripens, they manually pick the trees and spilt open the pod to reveal white pulpy materials surrounding the seeds. The seeds are the actual cocoa bean which are saved and the pulp is discarded. The pulp that is discarded is actually the sweetest part of the pod at that time and the beans are horribly bitter. The seeds are gathered and a fermentation process begins for 3 to 7 days. During this time chemical and physical changes are taking place that result in a seed that is on its way to becoming chocolate - although not the one we know and love yet! In this era of our beloved treat -it was still being used to make Xocolatl for royalty and so highly valued that they used this as a form of currency.

Drying to a smooth alabaster finish, it can be applied to cakes of all shapes and makes the perfect base for the most inticate or simplest of decoration. Fondant icing is a soft sugar-based icing that is generally rolled out to a thickness of about 1/4 inch, layed over the cake and smoothed and pressed into place before being trimmed for a perfect fit. Despite the fact that fondant cake decorations are ideal for wedding cakes, fondant icing is not always easy to work with so here are a few tips to help you get that perfect result.
Tip 1. A thin layer of icing, referred to as a "crumb coat" should be applied to the cake before the fondant icing is added. This produces a sticky surface for the fondant to stick to.
Tip 2. To prevent it from drying out, fondant icing should be put in a plastic bag (or covered with a non-permeable plastic wrap such as Sara wrap) and then placed in a tightly sealed container. I answered the quiet knock at my door, wondering who could be there. As an American attending a Spanish language school in Guadalajara, Mexico, I was very new to my neighborhood. A shy smile greeted me, and a 5-year-old little boy said softly, "My mother sent this over for you. She wanted you to try some special Mexican food." The plate he thrust into my hands contained what I recognized as chiles rellenos, mild chilies stuffed with cheese and fried in a foamy egg batter. They're delicious! Instead of simply acknowledging my appreciation for his mother's kind gesture, I followed the local custom of saying, "Thank you, I'll return the plate later." I had learned that the one who receives the food should return the plate filled with a similar gift. Inwardly, I congratulated myself on how well I was learning about the culture. Now, which was good practice for today's MyHATT responsibilities, I wondered what would be the best food to return to my neighbors. It should be something the whole family could enjoy, and it would be nice to give them something typically American as a special treat. As my brain ran through a list of possibilities, it stopped on chocolate chip cookies. What could be better? They would make an especially nice gift because at that time chocolate chips weren't available in the stores in our area of the city. I had just driven up to the border the week prior to renew my visa and shopped for some staples in a large grocery store while there, so I was well stocked with baking supplies. As I mixed the dough, I decided to add some nuts and raisins. Okay, so they wouldn't be typical chocolate chip cookies after all, but my neighbors would enjoy the taste. I had read in a magazine that adding some instant coffee to cookie dough bumps up the flavor, so included a teaspoon of that too. My sparsely furnished home didn't have a stove with an oven, but that wasn't going to ruin my plan. I knew that some cookies could be baked in an electric skillet, so decided to give it a try. I plugged in the skillet and placed a coffee can lid in the center to serve as a trivet. While it heated I looked for a pan that would fit in the limited space the skillet provided. The only one I could find that wasn't too large was a 9-inch cake pan. That'll work, I thought. There was just one little problem—the cake pan could only accommodate four cookies at a time. I wasn't about to give up now. It would just take more batches to use up all of the sweet, spicy dough. When I started my little cooking operation I had no idea that each batch took more than 30 minutes to cook due to the reduced heat. The old electric skillet I had at the time just didn't match a nice hot oven. Finally, after working in the kitchen for some three hours, all of the cookies were baked and I was feeling quite satisfied with my ingenuity. The next day when I saw my neighbor boy playing in his yard, I called him over and handed off the plate of cookies to give to his mother. She came over later that afternoon and told me how good the cookies were and that her family enjoyed them very much. "I ate so many of them," she commented, "and they were delicious. What secret ingredient did you use to make them so tasty?"

I thought about the ingredients the cookies contained, and the only unusual one was the instant coffee. Since I was just learning Spanish, it was a challenge to carry on more than just a very simple conversation. I wanted to explain about the "secret ingredient," the instant coffee, so I quickly formulated the sentence in my mind before verbalizing it. In English when we combine chocolate and coffee we call the flavor mocha, but how would I say that in Spanish? To tell my neighbor the cookies were mocha flavored I would need to use the phrase savor de moca, but we had just learned in language school that the noun (savor in this case) needed to match the adjective (moca), so I thought the last letter of moca should probably be changed from an "a" to an "o" to make it grammatically correct. Oh well, I thought, what's one little letter? So I told her my secret ingredient was savor de moco. As soon as the words left my mouth I saw the pleasant expression on her face turn to one of shock. My first thought was that my accent wasn't good enough and she had misunderstood me, so I repeated the phrase, slowly and more carefully. When her reaction remained the same I knew I had somehow blown it badly. Moco, moco, I thought, where had I heard that word before? And then I remembered—the only time that word had been used in my presence was when my neighbor's children had very runny noses from a cold! As I fumbled in Spanish, trying to explain what I really meant, the poor woman was probably wondering what kind of a crazy "Gringo" she had living next door. Needless to say, she didn't send over any more gifts of Mexican food for me to sample.

Between bouncy castles, magicians or renting out a private venue, kids parties are becoming more elaborate these days. Even the goody bags are adding up. Basically said, planning a kids party can be a lot of work but, with the right frame of mind, can also be a lot of fun. Its easy to get caught up in the best vision you can conjure. A room full of laughter and giggles; a cake better than all others; amazing games that not only keep kids happy but leave the parents in awe; and, of course, your child the center of all attention. Whats important to remember is that all this (and so much more) can happen on a big or little budget and, more importantly, all of this is bound to happen on the biggest day in your childs year. You know about the cake and goody bags. So, here are a few ideas to add to your party that will keep it unique - and still not break the bank.

Theme Costume Party This idea will work with most themed costume parties, be it superheroes, princesses, pirates or any Disney idea. Not only does each invited child show up in costume but also an adult friend shows up in costume as well. This idea works best when the face is covered also - like Spiderman. He looks more mysterious and perhaps even likely that it may actually be him. In much the same vain as mascots in amusement parks, all he needs to do is walk like Spidey, kneel down for photo opps and deliver the cake. He doesnt even need to talk. Colored sugar
1tube (0.68 oz) Betty Crocker® decorating gel
Assorted candies, such as jelly beans (cut in half), pastel mints, miniature jawbreakers, cherry rock candy
Betty Crocker® Fruit by the Foot® chewy fruit snack rolls (any flavor)

1.Heat oven to 350°F (325°F for dark or nonstick pans). Make and cool cake as directed on box for two 8-inch or 9-inch round pans. Wrap and freeze 1 layer for other use.
2.Cut cake in half; cut a notch on each cut side, slightly below center, to form wings as shown in diagram. Freeze pieces uncovered about 1 hour for easier frosting if desired. To make butterfly, arrange 2 wings on foil-covered tray, cutting board or cardboard; use 2 of the leftover notched pieces to form the body, trimming if necessary. Frost cake, attaching pieces with small amount of frosting.
3.Sprinkle with colored sugars. Outline wings and body with decorating gel. Decorate wings with assorted candies as desired. Roll fruit snack to make antennae. Store loosely covered at room temperature.

1.Heat oven to 350°F (325°F for dark or nonstick pan). Make and cool cake as directed on box for 13x9-inch pan.
2.Cut cake as shown in diagram. Freeze pieces uncovered about 1 hour for easier frosting, if desired. Tint 1/3 cup of the frosting with 3 drops green food color. Arrange pieces on foil-covered 18x15-inch tray, cutting board or cardboard to form skate as shown in diagram, trimming pieces to fit. Frost cake with white frosting, attaching pieces with frosting.
3.Outline inner throat and tongue of skate with toothpick. Tint 2 tablespoons white frosting with 2 drops yellow food color; frost inner throat. Frost tongue and back of throat with green frosting. Use fruit snack to form brake, strap and back of throat. Make 4 slits in bottom edge of blade and insert cookies for wheels. Outline skate and blade with decorating gel. Use ring candies for eyelets and wheel axles. Cut 1/4-inch-wide strips of fruit snack and use for laces. Store loosely covered at room temperature.

Cake:
6 whole eggs
1 cup sugar
1 tablespoon rum concentrate
1 cup cake flour
In a 5 quart mixing bowl whip the eggs and rum concentrate adding the sugar 1/3 at a time allowing 3 to 4 minutes between additions until all the sugar is in, whip until real fluffy and fold in your cake flour, add mixture to 3-9x1inch cake pans, bake in preheated 350 degree oven until golden brown, cool.
Syrup For Cake:
1 cup corn syrup
1/2 cup rum concentrate
Combine corn syrup and rum concentrate
When cake is cool drizzle syrup on to all 3 layers of cake.
Filling:
6 egg yolks
3 tablespoons corn starch
1/3 cup sugar
2 cup milk
1/2 cup rum concentrate
In a stainless steel sauce pan whip together eggs, cornstarch, sugar, milk and rum concentrate. Place pan on stove over medium heat until thick mixing regularly, don't burn. Cool to room temperature.
Assemble Cake: Starting with cake on a cake board or whatever the place filling evenly and repeating until ending with cake on top.
Your cake is now ready to be frosted: Frost with whip cream. Don't forget to put your sliced almonds on the sides and shaved chocolate on top with the cherries.

Ingredients:
* Rose, Black, Christmas Red Icing Colors * Roll-Out Cookie Dough * Poured Cookie Icing * Buttercream Icing * 2 large white gumballs

Bake cake using firm recipe such as a pound cake. Cut and bake one 2 1/2 in. and one 1 7/8 in. heart cookie on cookie treat sticks. Place 2 1/2 in. cookie on cooling grid over cookie sheet and cover with poured icing. Let dry. Trim off hands and arms. Ice smooth mouth, tummy area and bottom of feet with spatula. Imprint 3 1/4 in. heart cutter on tummy. Cut dowel rods 7 in. long; insert into cake for arms. Cover cake with tip 17 pull-out star fur. Pipe tip 4 teeth. Position gumball eyes and pipe tip 4 bead heart pupils. Pipe tip 6 bead on feet.

Pipe icing onto dowel rods with tip 17 and position cookies on sticks in arms with smallest closet to body. Pipe tip 17 pull-out star fur hands, piping over smaller cookie entirely. Pipe tip 2 message.
